Raspberry Balls

Here is a flashback from the 70's
Every Holiday season my Grandmother would make these wonderful raspberry balls.
It took me years and years to figure out the recipe, but I got it!!

It's incredibly simple and uses only 4 ingredients!
Jello Gelatin, coconut, sweetened condensed milk, almond extract.

And... You don't have to make them Raspberry.
You can use any flavor Gelatin.
The balls in the picture are cranberry balls. Yummm!
How about a big platter of Raspberry Balls (red) and Lime Balls (green) for Christmas?
Perfect for the Holidays!


Raspberry Balls

1 large package flaked coconut.
1 large box jello gelatin. (any flavor, but I like raspberry best)
1 can sweetened condensed milk.
1/4 teaspoon almond extract, (can use raspberry instead)

1 small box Jello gelatin (for coating finished balls.)

  1. Mix first 4 ingredients.
  2. Roll into small balls.
  3. roll to coat in the small package of jello.
  4. refrigerate in an air-tight container.
  5. Enjoy!
Tip... wet hands for rolling to help control the sticking.

I just had to come back and tell ya that I found a package of blueberry jelly in the cupboard while I was searchin' for the raspberry (they call Jello "jelly crystals" here)... But I was a bit worried about making blue balls.
Not very festive eh? But handy to have the next time my guy's in trouble I guess.

We used to make something like this, but shaped like strawberries with a sliver of almond in place of a stem. Sweet but awesome! Glad you figured out the recipe.

I just came across this...very interesting! It reminds me of my mom's recipe for "irish potatoes" which uses coconut, condensed milk, and powdered sugar (instead of the jello), then are rolled in cinnamon. She used to make them every year for St. Patrick's Day.

Well, i'm not sure...
...that I did it right.

Large pack of coconut - we get 250g 500g and 1Kg bags. 250 looked like plenty so i went with that. what did you use?
Actually, living here in Cairns, we have plenty of fresh coconuts, so It'd be interesting to know the quantity, so when I get a couple off my neighbour, i'd know how much to use??
Flaked - Grated, what's the difference (in my supermarket, it's price - double, so I used grated, not flaked...

Large box of Jello.. we only get 85g packs I used 1 pack in the mixture and 1/2 a pack for rolling. what did you use?

1 can of condensed milk - we get 395g tins - how about you?

I didn't have any Almond Extract couldn't find it in the shop. I guess over here we'd call that Essense??... and I didn't have anything, not even Vanilla - So in went 2 tablespoons of slivered almonds.

I've got a tray full in the fridge now, I'll try them on the kids in the morning. Thanks!

A large box of Jello is 6 oz. The texture of these is light, tender, and chewy. CAUTION...they are TOOTH-ACHE-INGLY Sweet!! But ohhh so yummy...so make the on the smaller side :)

I found the texture too soft so had to refrigerate for about an hour and than roll the balls and dipped them. They are verrryy sweet so, yes I agree, make them on the smaller side or cut in half once they are made. They do look very festive.

Making them the day before, (or Friday) woul be perfect. Store in fridge? With wax paper between layers. Hope you like!

I was given a sample of these jello balls at a craft fair and fell in love so I tried making them last night, the consistency did not come out at all like the ones I had at the fair.They are wet and sticky and super sweet and heavy. I don't know what I did wrong :(

My mom used to make these too! She called them easy marzipan and would try to shape them into fruit shapes, mostly strawberries so she must have used strawberry jello!
