She's Cooking Like Mommy?

Tonight was a rare night on the farm. My 8 year old daughter and I were home...Alone! No boys to be seen! This just NEVER happens!

I wanted it to be a special evening, so I told her we could do "anything she wanted." Guess what she wanted to do? She wanted to cook dinner for the two of us...all by herself.

Hmmmm.  I figured we would be dining on ice cream and cookies.

Instead, she emerged from the pantry carrying two cans of Chef Boyardee Beefaroni.

Well that was easy! I thought to myself.

But the Little-Foreman-in-Pink IS my daughter, and she informed me that she wanted to cook "like Mommy" and turn one thing into something else!

I was stumped, so I did what I always do and went to my trusty internet for inspiration. I found the Chef Boyardee web site, and guess what??  They actually have chef-created recipes using their products! (http://www.chefboyardee.com/recipes)

Some looked more interesting than others, but they all got our minds going, and we were determined to come up with our own creation using our Chef Boyardee Beefaroni.

We decided to make a Beefaroni Pot Pie! Yep, I said it! A Chef Boyardee Beefaroni Pot Pie! This is how we did it...

We started with our Chef Boyardee Beefaroni.
First, we heated it up on the stove.
While the Beefaroni was heating,
we mixed up one package of our favorite cornbread mix.
 
We got out our cute single-serving sized casserole dishes
and filled them about 2/3 of the way full with our hot Beefaroni.
Then we topped it with the cornbread batter.
(Making sure it touched the edges of the casserole to seal in the Beefaroni.)
Once they were all filled and pretty, we put them in a 400 degree oven 
to cook for about 18 minutes.
When the cornbread is golden brown it's done!
 
We were thrilled with the results!
 
Not only did I get to enjoy one of my childhood favorite meals with my daughter, but we made it "our own" by changing it up.
 
We couldn't have done this at a better time.

Day-um, Dana. Loved, loved, loved that Little-Foreman-in-Pink is cooking for you ... and that she is creating her own dishes.

But!!

Never could stand Chef Boy-ar-dee, even in my youth.

Children are GREAT in the kitchen!!! Great way to teach mathematics in a 'taste=ful' way! Two of my children are great cooks, the third married a great cook!!! LOL!!!

I LOVE getting to read what you write! And since I have a secret, hidden love of Chef Boyardee (which the men in my home do NOT share), I may have to chase the guys out of the house so I can fix this dish ;>
